This lame (pronounced ‘Lahm’ which is a French word that means ‘blade’) is as a sourdough scorer - it slices the dough before being placed into a hot oven. Scoring dough helps the bread expand in the oven without the skin splitting randomly. You can even get creative with different scoring patterns in your sourdough bread! The lame comes with 5 blades.
