This is a sweet, clean, and crisp washed Honduran Parianema from producer Edgardo Tinoco roasted by Verve! We find citrus, a clean crisp acidity from green apple, and a candied walnut sweetness. When cooled, the acidity becomes very defined while the cup is wrapped in a large body of sweetness. The finish is nice and clean too leaving a candied walnut-like sweetness.This is a classic washed Honduran profile that we really love! We also recommend you pay attention to the body and texture of this coffee and see how the acidity shifts when the cup cools. For best results, we recommend you rest this coffee for at least 3+ weeks! From Verve: Edgardo Tinoco planted his first coffee plot in 1995 as a teenager, beginning a journey that would establish him as one of Honduras’s most respected producers. His farms are located on the southern slopes of the Santa Bárbara Mountain Nature Reserve, a biodiverse landscape of cloud forests, tropical jungles, and pine forests. After reaching the finalist stage of the Cup of Excellence in 2009, Edgardo continued refining his cultivation approach, placing third in 2010 before earning first place in 2011 with an impressive 91.78-point score. Beyond coffee, Edgardo is known for his energetic personality and enthusiasm for cars, often spotted driving his bright blue Jeep through the region.
